Oven-Fried Yuca (Yuca al Horno)
This oven-fried yuca is a wonderful, fiber-rich alternative to traditional french fries, prepared with minimal fat.
Ingredients
- 1 pound fresh yuca (cassava), about 370 g after peeling and removing the woody core, cut into 3-inch sections (or peeled frozen yuca) · 558 kcal
- Nonstick cooking spray
Method
Place the yuca in a large pot and cover with cold water by 1 inch. Bring to a boil, then reduce heat and simmer slowly for 20 to 30 minutes until tender.

Preheat your oven to 350°F (175°C). Transfer the cooked yuca to a cutting board using a slotted spoon, let it cool, then cut lengthwise into 3/4-inch-wide wedges, discarding the woody central core.

Lightly spray a baking sheet with cooking spray. Arrange the wedges in a single layer, spray them with cooking spray, cover with foil, and bake for 8 minutes. Remove the foil and bake for another 7 minutes until lightly crisp.
