Peruvian Beef Stir-Fry (Lomo Saltado)

Method
Trim any excess fat from the sirloin steak and cut it into small, thin pieces.

In a large skillet, heat the vegetable oil over medium-high heat and sauté the minced garlic until it turns golden.

Add the steak, vinegar, salt, and pepper to the skillet. Cook for 6 minutes, stirring the beef constantly until it is nicely browned.

Stir in the sliced onions and tomatoes. Cook until the onions become transparent, then serve immediately alongside the warm, diced boiled potatoes.
