- 1 cup strained yogurt (250 g) · 238 kcal in the whole recipe
- 2 tbsp crushed pistachios (20 g) · 112 kcal in the whole recipe
- 1 cinnamon stick (optional)
Method
In a small saucepan, combine the dried apricots, sugar, 1.5 cups of water, and optional cinnamon stick.

Simmer over low heat for about 15-20 minutes until the apricots soften and absorb the syrup, then remove from heat and let cool completely.

Slit each cooled apricot along the side to create a pocket and fill generously with strained yogurt.
