Mexican Cinnamon Rice Pudding (Arroz con Leche)
This lighter version replaces heavy cream and refined sugar with high-protein nonfat Greek yogurt and natural honey, keeping the classic creamy texture of Arroz con Leche.
Ingredients
- 1/3 cup uncooked white rice · 180 kcal
- 1 2/3 cups skim milk · 136 kcal
- 1 cinnamon stick
- 2 strips of fresh lime peel
- 1 tablespoon honey · 61 kcal
- 1/3 cup nonfat Greek yogurt · 61 kcal
- 1/2 teaspoon ground cinnamon, for dusting · 5 kcal
Method
In a medium saucepan, combine the dry rice, skim milk, cinnamon stick, and lime peel. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 20 to 25 minutes until the rice is tender and has absorbed most of the milk.

Remove the saucepan from the heat. Carefully discard the cinnamon stick and lime peel strips, then stir in the honey and let the mixture cool slightly for 5 minutes.

Whisk in the nonfat Greek yogurt until completely smooth and creamy. Divide into two serving bowls, dust with ground cinnamon, and serve warm or chilled.
