- 1 tsp salt, 1/2 tsp black pepper, 1 tsp red pepper flakes, 1/2 tsp cumin
Method
Slice the eggplants into thick rounds without peeling, soak in salted water for 15 minutes to remove bitterness, then pat dry thoroughly.

In a mixing bowl, combine the ground beef, grated onion, minced garlic, salt, black pepper, red pepper flakes, and cumin, kneading well to form walnut-sized meatballs.

In a round baking dish, arrange the eggplant slices and meatballs alternately in a tight circular pattern.

Cut the tomatoes and green peppers into thick wedges and place them in the center and around the edges of the dish.

Whisk the tomato paste, olive oil, and 1 cup of hot water together in a small bowl, then pour evenly over the kebab.

Bake in a preheated oven at 200°C (400°F) for about 40 to 45 minutes until the eggplants are tender and the meatballs are browned.
