Caribbean Stewed Chicken (Pollo Guisado)

Method
Season the chicken thighs with dried oregano, red wine vinegar, salt, and black pepper.

Heat the olive oil in a large pot over medium-high heat and sear the chicken pieces until browned on all sides, about 5 to 6 minutes.

Add the onion, green bell pepper, garlic, and cilantro to the pot, sautéing for 3 to 4 minutes until the vegetables are softened and fragrant.

Stir in the tomato sauce, chicken broth, potato cubes, carrot slices, and green olives, then bring to a boil.

Reduce the heat to low, cover the pot, and simmer for 20 to 25 minutes until the chicken is tender and the potatoes and carrots are fully cooked.
